It’s pancake day and all the team at letslivehere cannot wait to get home, fire up the stove and whack on some sizzling buttery batter – caking it in icing sugar, lemon juice and lashings of golden syrup!

We hope you all have a fantastic evening cooking up some goodness in your homes, we have so many properties left ideal for students or professionals wanting what we call “chef kitchen’s” in their rented accommodation! In case you didn’t know, a “chef’s kitchen” is a kitchen perfectly formed and designed for tenants that love to cook – one of our many “in office” phrases or terms!

In the meantime, here’s a little recipe from Michael, our business development director. He says it’s a wonderful twist on traditional British pancakes (thinner than American pancakes of course) and urges you to try it!

“Hi everyone, this is one of my favourite savoury pancake recipes because it just works so well and is so delicious. It’s so simple and quick. I’ve not put down any measurements, because it’s all totally customisable to your taste!

You’ll need:

Pancake batter
Cream cheese
Mature cheddar
Ham (if you’re not a veggie!)
Spring onions
Parmesan cheese

Method: Start by mixing the cream cheese, cheddar cheese and ham in a bowl. Cook your pancakes on both sides, not too overdone, and place them on a piece of greaseproof paper. Spoon on a small amount into the centre of a flat pancake, and fold over into a parcel. Slice a spring onion into thin strips and tie the parcel just like a gift! Sprinkle over some parmesan cheese and bake in the oven for 20-25 minutes, until golden brown and bubbling inside.
